How to Store Microgreens and Keep Them Fresh for 7 Days
We harvest our microgreens fresh daily, but life happens — and you might not use your entire delivery immediately. With proper storage technique, your microgreens can stay crisp and nutritious for 5–7 days after delivery.

The Golden Rules of Microgreen Storage
Rule 1: Don't Wash Until You're Ready to Use
Water accelerates decomposition in leafy greens. Store them dry, and only rinse the portion you're about to use. This single habit can extend freshness by 2–3 extra days.Rule 2: Refrigerate Immediately
Microgreens are living plants that continue to respire after harvest. Refrigeration slows this process dramatically. The ideal temperature is 2–4°C (35–39°F) — standard refrigerator temperature.Rule 3: Allow Air Circulation
Don't seal microgreens in an airtight container without any air — they need to breathe slightly. Use containers with small ventilation holes, or leave the lid slightly ajar.Rule 4: Keep Them Dry

What to Do If Microgreens Are Getting Limp
If you notice your microgreens starting to wilt but haven't gone slimy, you can often revive them:
- Fill a bowl with ice-cold water
- Submerge the microgreens for 5–10 minutes
- Remove and pat completely dry
- Use immediately
- Slimy or wet texture — bacterial growth has begun
- Strong unpleasant odor — fermentation or rot
- Brown or black spots — fungal decay
- Heavy yellowing — lost chlorophyll, significantly reduced nutrition
Note: This works once. It doesn't extend storage life — use them right after reviving.
Signs That Microgreens Have Gone Bad
Don't eat microgreens that show any of these signs:
Slight wilting with no other signs is usually fine — just revive with ice water and consume immediately.

Freezing Microgreens: Is It Possible?
Technically yes, but not ideal. Freezing destroys the delicate cell structure of microgreens, making them mushy when thawed. They lose their pleasant texture — though frozen microgreens can still be blended into smoothies.
Best approach for freezing:
- Blanch briefly for 30 seconds in boiling water
- Immediately transfer to ice water bath
- Dry thoroughly
- Freeze in flat layers on a baking sheet
- Transfer to freezer bags once frozen
- Order in sync with your meal plan — don't order more than you'll use in a week
- Portion immediately — divide your delivery into portions right away
- Keep separate from ethylene-producing fruits — apples, bananas, and avocados release ethylene gas that accelerates ripening and decomposition in nearby produce
- Bottom shelf is colder — store microgreens on lower refrigerator shelves
Frozen microgreens are best used within 2 months, exclusively in smoothies or blended dishes.
